Do you think adding a half cup or so of blueberries instead of the nuts would cause a problem in the recipe? Slice remaining banana into 1/8-inch-thick rounds; place a slice on each muffin. They come out soft, moist, and delicious!
I used 24 regular sized (2 pans) and 12 small (1 pan holding 12 muffins)for a total of three pans. I did a Google search for sour cream banana muffins and I came across this recipe on a blog called The Cookbook Chronicles (now a book, The Newlywed Kitchen). Turn unlined muffins onto rack, and remove lined muffins as well, onto rack.
