Here is a graph that plot the gain in quality of a 12 steps synthesis with and without Inner quiet (High Mythril Flanchard with lv45 armorer) using HQ weapon/offhand, NQ gears, and no materia. I've been thinking about playing a Dragoon (mostly because I always liked those in older FF titles). Each class has a handful of skills that can be used by the other crafters and they build off of each other. Press question mark to learn the rest of the keyboard shortcuts. Other weapon crafters are goldsmith (black mage, red mage, astromancer), alchemist (books) and blacksmith (damn near everything else). All of them. Weaver should rival goldsmtih as one of the most profitable classes in both the short and long term. Armorers treat and work the malleable metals of Eorzea into all forms of armor. if there is a triple here I believe it would most likely be the Fire for hire, the molybdenum rimfire. Nothing. Same at end-game, unless you're trying yourself at savage/ultimate raiding, substats aren't all that important compared to mainstats, as those increase your damage by a lot. This will allow you to get i120 gear once you're level 50, and you can also spend some on i260 gear to use once you hit 60, So really, unless you plan to do savage raids right when they come out once you're at max level, you won't need to worry about crafters. They absolutely are. Reminds me of my early WoW days. Off the top of my head, I think the current end game crafted gear uses Weaver for the top and pants, armorer for head/hands/feet, leatherworker for the belt, carpenter for the necklace/bracelet, goldsmith for the earring/rings, and blacksmith for the spear.

...Yea, that's why I started a post just now and asked the same question but with all the professions instead of just two. There will likely be a decent market for crafted weapons as well, again, high quality in particular. Armorer has an advantage in that blacksmith cannot craft plates, but blacksmith has the advantage of crafting offhands which I expect won't be amazing sellers in the long run, but will still be solid. Leatherworker doesn't currently have access to any minion recipes as far as I know so I think for that reason its a bit less profitable than weaver or goldsmith, but still should be good. After researching the crafting recipes in-game and playing with my ARM, BSM, CRP, and GSM, I agree with most things, however I believe you're underestimateing the long-term price for stuff like Darksteel plates, and ingots, while at first it doesn't seem like it would go long term (with things like raid gear being available.) also crafting without gathering is pretty expensive. I’ve hit 56 on armorer yesterday and got to 58 today in about 3 hours. Would it just be non-optimal, or would it be "I don't even want to be in the same party as you" level dumb? Still it's a significant investment to get there and due to how XIV treats its various armor and crafts as the other answer noted, you'll probably want more stuff.
However, from the list above, you can see the wide variety of crafting and gathering arms they can craft. You can become a Blacksmith by visiting the Blacksmith’s Guild in Limsa. As such, most people don't level crafters at all, and it doesn't really matter much if you do. Lances are sometimes carpenter sometimes blacksmith(maybe also sometimes goldsmith for a few types), armor is often a mix of armor, weaver and leather for most classes(casters tend to be weaver/leather only, but everything else tends to mix stuff, like leather belt and weaver hats and what not) and jewelry is goldsmith/carpenter, so that forces you to level almost everything.
