Made with fresh or frozen berries, vegan blueberry baked oatmeal is a cross between a dessert and a meal. To make this oatmeal bake, start by preheating the oven to 350 degrees Fahrenheit.
Bake: Place loaf pan in oven and bake for 50 – 55 minutes, rotating the pan once halfway through. Gently fold in the blueberries (above left). Say hello to my new favorite banana bread. I wound up with 16 muffins that were quite small since they did not rise very much. Just talking about this recipe is making me hungry! It works great for vegan baking. Fill the prepared muffin cups evenly with batter. If you want to make this into a loaf, bake for 45-50 minutes.
Combine: In a medium sized mixing bowl, add the flour, oats, sugar, baking powder, baking soda, optional cinnamon and pinch of salt, stir to combine. The recipe does not tell you how far to fill the liners so I went with 3/4's of the way. The spottier, the better.
